Whistle Creek Apiaries produces the healthiest kind of honey – raw, natural, unprocessed and unrefined honey, with no additives or preservatives – from over 800 hives around Rockbridge County, Virginia. Whistle Creek Apiaries has been a family-owned and operated business since 1976.
Wildflower Honey is produced from pollen that bees have collected from the variety of flowers in bloom during the summer in Rockbridge County. As such, its taste reflects a very specific part of the world at a specific time…a sweet and floral taste of the Rockbridge County summer! It is a great, all-purpose honey for those who prefer a milder flavor.
Tulip Poplar trees are native to the eastern and southeastern U.S. and can grow up to over 150 feet in the Appalachian Mountains. Tulip Poplar Honey is produced from the pollen from the large, tulip shaped flowers and has a unique, deep, robust, smoky flavor. It is great for baking, in coffee and tea, on biscuits, with cheese…basically anywhere you want a strong honey flavor. It is the honey that most of our local customers prefer.
The kind of raw, unfiltered, unprocessed honey that Whistle Creek Apiaries produces may crystallize (get cloudy and thick) in time. This is natural and does not mean the honey has “gone bad”… honey never spoils. You can re-liquify it by leaving it on your car dashboard on a warm, sunny day or steaming or heating it in a pot of hot water. Do not heat your honey in the microwave, as microwaving will cause the liquid in the honey to boil, destroying its beneficial enzymes and affecting its quality and taste. The most important aspect of the decrystallization process is SLOW, controlled heat with temperatures under 140°F.
