Wade’s Mill Wapsie Valley Cornmeal is stone-ground from a heritage, open-pollinated, non-GMO yellow corn traced back to eastern Iowa in the 1880s. One farmer kept the local Native American corn variety under cultivation when the other farmers moved to hybrid corn. His farm was in the valley of the Wapsipinicon River (known locally as the Wapsi/Wapsie), for which the corn was named.
Wapsie Valley corn is bright yellow, with about one every twenty ears a beautiful copper red or orange. Wapsie Valley Cornmeal is a gorgeous deep yellow with prominent red flecks and has a sweet and mellow flavor. It makes a gorgeous, flavorful cornbread and can also be used for some of the best hushpuppies we’ve ever tasted. We also use it for any cake recipe calling for cornmeal or polenta.
In former days, the longstanding tradition at community corn-huskings was that the person who found and shucked a red or orange ear got to kiss the person of their choice!
Our Wapsie Valley corn is grown exclusively for us by a heritage family farm in Dayton, VA.
