Description
Spelt (Triticum spelta) is a species of wheat and an ancient grain that has been cultivated since approximately 5000 B.C. Spelt flour has a slightly sweet and nutty flavor, with a softer and lighter texture than whole wheat flour. It can be substituted one-for-one in recipes using whole wheat flour and for up to 50% in recipes using all-purpose flour.
Wade’s Mill Organic Spelt is stoneground from the whole spelt kernel, which retains a high fiber and nutritional value. Spelt is higher in protein than regular wheat and also contains iron, calcium, magnesium and zinc.
We source our Spelt from an Old Order Amish farmer in Lancaster Count, PA. It is Sungold variety and is PCO (Pennsylvania Certified Organic). The tillage, seeding and harvesting of the crop is done with horse-drawn equipment (no fuel powered equipment involved) and the harvesting is done by hand with long handled pitch forks, as would have been the process 100 years ago. We are honored to be able to support this traditional method of grain cultivation.
