Our Shenandoah Seasoned Flour is stone-ground from the soft winter wheat variety “Viper”, the same wheat that was used by now closed Big Spring Mill for their famous Seasoned Flour. We got our first bags of Viper seeds from Big Spring Mill in early fall 2022 and delivered them to our farmer in Rockingham County. He harvested our first Viper crop in the summer of 2023 and we spent several months testing and tweaking our seasoned flour recipe.
Thanks to ongoing feedback from many customer testers…or”fantastic fryers” as we affectionately named them…and with particular input from a wholesale customer who used a lot of Big Spring Mill Seasoned Flour, we arrived at a seasoned flour with a flavor profile that we’ve been told is a worthy successor to Big Spring Mill’s version. We’re sure you’ll enjoy it!
